So, the husband’s taken to snacking on avocado.

Not sure why this is happening. Maybe it’s all my chatter about eating healthy as much as possible. All I know is that lately he’s taken to eating avocado.

Make that half an avocado.

Which leaves me with an unused half. Now what? That’s got me looking for recipes that will use up part of an avocado.

So I was happy when I came across this recipe in Cassey Ho’s “Hot Body Year Round.” The founder of Blogilates, Ho is familiar to many who know her her instructional exercise routines found on YouTube.

She compiled 20 of those workouts in the pages of this book, which also includes her words of wisdom as well as recipes and meal plans. (All done against such great outdoor backdrops!)

The recipes are compiled by seasons, and she’s got a simple little salad that uses much of what you’ll find right now on your weekly trip to the farmers market.

What really caught my eye though, was the avocado dressing. It’ll use up what the husband leaves behind. It’s also a good recipe to have in mind after buying cilantro. Cilantro gets soggy very quickly, so you have to get rid of any extra as quickly as possibly. This will help you do just that.

Since Ho’s followers tend to be younger, the recipe here serves one. However, it can easily be increased to serve more.

The book has a nice array of simple to prepare recipes that rely on fresh ingredients. Even the newest of home chefs will be able to master them.

SUMMER SALAD WITH AVOCADO DRESSING

MAKES ONE SERVING

1 (4-ounce) cooked chicken cutlet, cut into cubes

1 cup chopped arugula

1 cup chopped fresh spinach

1 radish, thinly sliced

½ red bell pepper, seeded and sliced

Dash of cracked black peppercorns

DRESSING:

¼ ripe avocado

¼ cup chopped fresh cilantro

½ garlic clove, smashed

1 tablespoon lime juice

Pinch of salt

1 to tablespoons water, as needed

Combine and toss the salad ingredients

To make the dressing, combine the ingredients in a blender and process until smooth, using as much water as necessary to get the desired consistency.

Pour the dressing over the salad and toss.
