Too often, mashed potatoes made ahead of time taste just like that. Yet, if you’re having a crowd for Thanksgiving, it sure would be nice not to have to make them while little children are playing It around your ankles, wouldn’t it?

That’s why I love Sara Moulton’s solution: Make them tonight but do not add the dairy. Tomorrow, reheat them, add dairy and spices. Done!
