Chipotle took its tofu filling national in February 2014 in an effort win over vegans and vegetarians. Sofritas is shredded tofu braised with chipotle chilies, roasted poblanos, and a blend of aromatic spices.
“Sofritas is a very different kind of menu item, not just for Chipotle but for any fast-food or fast-casual restaurant,” Chipotle founder Steve Ellis said iwhen the product went into wider testing. “It was conceived with vegetarians and vegans in mind, but it’s so delicious that we see its crossover appeal as well.”
