Chicago-area businessman Marcus Lemonis plans to open a Greek restaurant in Highland Park.

The Simple Greek, a fast casual restaurant, is expected to open this spring at 478 Central Ave. Its signature sandwich is a gyro. Sandwiches and salads are prepared assembly line style in front of customers, similar to the systema used by Chipotle Mexican Grill and Subway.

Lemonis invested in the Pittsburgh-area company, formerly known as My Big Fat Greek Gyro, through his CNBC series “The Profit.”

“Coming from a Greek family, I am particularly excited to bring this dining experience to the wonderful community of Highland Park and give our customers reasonable prices and convenient access to great food,” Lemonis said in a news release.

The Highland Park restaurant will be close to another of Lemonis’ businesses. He opened a Crumbs Bake Shop at 469 Central on Monday, Jan. 26.

Lemonis is chairman and CEO of Camping World, the Lincolnshire-based RV and outdoor retailer.
