No one wants to waste the produce they buy. But for those times when you know it is fading — but don’t have an immediate use for it — it’s a good idea to get creative.
Here are a few suggestions:
Got any lemons, ginger or cucumber that needs using? Infuse it into vodka for a flavored cocktail, or flavor your water. The vodka needs about two weeks to steep, the water just a few hours. (via Greatist)
Got a lot of fresh herbs? Make an herb oil by blending herbs with a neutral oil, heating it slowly and then straining. It can be kept in the fridge and used in salad dressings or as a finishing drizzle. (via Bon Appetit)
Got some broccoli, zucchini or potatoes that need a home? Roast them in the oven, tossed with olive oil, salt and pepper. They’ll last for a few more days once cooked. (via Good Housekeeping)
In general, cooking your wilting produce or freezing it will help extend its shelf life — but don’t forget to use it later!
