A New York favorite — Just Salad — has opened shop in Chicago.
There are more than 20 of the fast-casual eateries in New York City, and now one here,. in the Gibbons Building (20 E. Jackson).
Just Salad uses as its protein grass-fed beef, antibiotic-free (and humanely raised) chicken, sustainable seafood and organic tofu. It uses local produce as much as possible and also offers organic and GMO-free options as well as keeps an eye on affordability, with some starting at $6.99.
Actually, the name isn’t totally accurate. While salads are certainly the main draw, Just Salad also offers wraps, smoothies and soups.
Back to the salads, though. You can pick from more than a dozen types or create your own personalized salad bowl. Follow the color-coded key on the menu and you’ll be able to figure out which offerings are vegan, fat- or gluten free or low-carb.
As a nod to its arrival in Chicago, Just Salad’s spring menu includes the Windy City Kicker, which brings together romaine, Fabbri hot Italian sausage, Marconi Giardiniera peppers, Parmesan, green peppers, celery and red onions.
